Determination of antioxidant and antifungal activities of young rice for use as functional foods and skin care cosmetics
In the morning of May 17, 2023, Can Tho city Department of Science and Technology had Council meeting to self-evaluate the results of implementation of the city-level S&T task "Determining antioxidant and antifungal activities of young rice for use as functional foods and skin care cosmetics." The Council was presided by Dr. Truong Hoang Phuong, Deputy Director of Can Tho city Department of Science and Technology. The study was co-carried by Dr. Nguyen Phu Tho and Mr. Dang Chi Thien. Can Tho Science and Technology Advancement Application Center is an implementing agency.

The purpose of this study is to determine the antioxidant activity and antifungal activity of young rice that can be applied to the production of functional foods and skin care cosmetics.

Through the implementation period from July 2021 to June 2023, the project has completed two registration contents: Research to determine antioxidant activity of young rice for application in functional food production; Study to determine the antifungal degree of young rice for use as skin care cosmetics. The main products that the project achieved are the process of producing young rice flour with high antioxidant activity with a scale of 1kg/batch for two rice varieties IR50404 and Fragrant rice; Production process of young rice extract with antifungal properties with a scale of 1 liter/batch for two rice varieties IR50404 and Blood dragon; Production of young rice flour of two rice varieties IR50404 and Fragrant rice with high antioxidant activity (2kg); Production of young rice extracts of two rice varieties IR50404 and Blood Dragon with high antifungal activity (2 liters).

The Council evaluated the study has implemented the contents on schedule and with novelty. In addition, the Council also gave some suggestions for the research team to edit and complete the content according to the explanatory outline.
